The ability to change an SKU depends on the product configuration:
Single product (no variants)
You can change the SKU of products that have no variants without any problem. SKU is not a required field in this scenario so it is informational data from our perspective. We ultimately use the underlying product_id to call the API to retrieve inventory information.
Product with variants
An SKU is required for variants and changing the SKU can be problematic.
If you just change the SKU, all is ok because the underlying variant_id does not change.
If you change the SKU by adding a new variant with the new SKU and deleting the old variant. This is where problems arise. The SKU and the variant_id both change in this scenario. With both identifiers changed, our system has no way to map the old registrations to the new product configuration. If this is the situation, you will have to submit a support ticket and let us know what the old SKU was and the new SKU to change it to.
